Tuna Stuffed Tomatoes

NOTE:  Just in time for a fresh plump summer tomato, this tuna-stuffed tomato is so delicious.  A salad in itself, everyone will want one of these.

Ingredients:

  • 4 large plump fresh firm tomatoes
  • 2 cans tuna packed in olive oil
  • 1/2 cup tender celery hearts, chopped small
  • 1/4 green onions, tops included, chopped small
  • 2 large boiled eggs, chopped
  • 1/4 cup green olives with pimento
  • 1/3 cup fresh basil leaves, chopped small
  • 1 teaspoon red wine vinegar
  • Green curly large lettuce leaves
  • Peppermint sprigs

Instructions:

  1. Cut tops off tomatoes crosswise, about 1/2-inch down.  Gently scoop out inside of tomato leaving side and bottom margin to support filling.  Put the scooped out tomatoes in a large bowl; set aside.  Pour the tuna with oil in bowl with tomatoes.  Add the celery, onions, eggs, olives,basil leaves, and vinegar.  Toss together gently with fork.Tuna Stuffed Tomatoes
  2. Stuff each tomato with the filling to a little over the top.  Place a large green curly lettuce leaf on 4 plates.  Set the tomatoes on each of the lettuce leaves.. Garnish with a sprig of peppermint.  Makes 4 Stuffed Tomatoes
