Italian Peppermint Sauce for Breaded Meat

Homemade Italian Peppermint Sauce

Homemade Italian Peppermint SauceNOTE:  My father would grow peppermint every summer, and when he would barbecue meat, he would slather this sauce over the meat using pepperming sprigs.  It was so good over breaded steaks, chicken and even fish. 

Ingredients:

  • 1/2 cup fresh peppermint leaves, packed
  • 1 large clove garlic, chopped
  • 1 large fresh tomato, cored, peeled and chopped fine, about 1 cup.
  • 1/4 cup extra virgin olive oil
  • 2 tablesspoons water
  • 1 teaspoon fresh lemon juicee
  • 1/2 teaspoon coarse sea salt

Yield: Makes 1 cup

Instructions:

Place peppermint and chopped garlic in a wooden bowl and pound with a wooden pestle until smashed together, about 1 minute. Remove to a larger bowl and add the chopped tomato, olive oil, water, lemon juice and salt.  Stir together until well blended.  Makes 1 cup sauce. This recipe can easily be doubled for larger platters of meat served.
