
NOTE: New little red or brown potatoes really highlight this recipe. Tender and full of flavor, dress these potatoes with sour cream and green onions for a wonderful side for most any country entree.
Ingredients:
- 2 pounds small red or brown new potatoes
- 2 teaspoons salt
- 8 tablespoons butter
- 1/3 cup sour cream
- 3 to 4 green onions, finely chopped, tops included
- 1/2 teaspoon coarse sea salt
- 1/4 teaspoon coarse ground black pepper

- Scrub and rinse potatoes and place in a large 8-quart pot. Cover with water by 1-inch. Add the salt and bring to boil. Cook potatoes until tender, about 15 to 20 minutes. Drain most of water, leaving about 1 tablespoon in bottom of pan.
- Return pot to stove over very low heat. Add the butter and stir until butter melts. Keeping pan over heat, gently smash most of the potatoes into the butter, and continue to heat through, about 1 to 2 minutes. Fold in sour cream until spread throughout. Fold in onions, sea salt, and pepper. Potatoes should appear somewhat lumpy. Add more seasoning if desired. Serve warm. Makes about 6 servings.
