Italian Stuffed Green Pepper Soup

Stuffed Pepper Soup

NOTEThis recipe is a keeper, and everyone who tries it, loves it.  It is a hearty soul-warming soup full of peppers, vegetables, soft rice and Italian  seasoned hamburger.  One bite, and you will be hooked!

Ingredients:

  •  2 pounds ground beef chuck
  • 1/3 cup Italian seasoned breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 1 clove garlic minced
  • 1 teaspoon fennel seed
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 3 to 4 eggs
  • mild olive oil for frying
  • Soup Ingredients
  • 2 tablespoons mild olive oil
  • 1 cup tender celery, diced
  • 1 medium onion, diced
  • 1 green pepper, cut small
  • 1 red pepper, cut small
  • 1 yellow pepper, cut small
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon red pepper flakes
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon dried basil
  • 1 teaspoon sugar
  • 1 (15-ounce) can diced tomatoes
  • 2 (15-ounce) cans tomato sauce
  • 1 (32-ounce) carton beef broth, more if desired
  • 1 1/2 cups Zatarain's cooked rice

Instructions:

  1. In large bowl, combine ground chuck, breadcrumbs, cheese, garlic, fennel seed, salt, pepper and eggs.  With clean hands, mix meat, spices , and eggs, until well combined.   Place olive oil in a large skillet, and brown the meat until lightly browned, crumbling the meat in pieces.  Do not overcook the meat.  Drain the grease from meat and set aside.
  2. In large 8-quart saucepan, place olive oil and turn heat to medium.  Add the celery, onion, peppers, garlic, salt, pepper, red pepper flakes, Italian seasoning, basil, and sugar.  Saute the vegetables for about about 8 to 10 minutes, stirring often, until the vegetables are heated through and begin to look translucent.
  3. Next, add the diced tomatoes, and continue to cook together with the vegetables for the next 6 to 8 minutes.   Add the tomato sauce, beef broth and hamburger.  Cook over medium heat for about 15 to 20 minutes, stirring often to avoid sticking.  Stuffed Pepper Soup Lastly, add the rice and  simmer for an additional few minutes, until rice is heated through.  Taste for flavour, and add any additional spices  if  desired.  For a thinner soup, add additional beef broth until desired consistency.  Serve soup hot with crusty Italian bread.  Serves 8
