
NOTE: If you like peppers and Italian sausage, you will love this dish. Full of good Italian flavour!
Ingredients:
- 12 ounces spaghetti, or linguine
- 1 tablespoon salt
- 8-quart pot boiling water
- 1/2 cup reserved pasta water, reserved
- 3 bell peppers: green, red, and yellow
- 1/4 cup olive oil
- 1 small onion, chopped, about 1/2 cup
- 2 cloves garlic, chopped small
- salt and pepper
- 2 Italian sausage links cut into 2-inch round
- 1(15-ounce) can tomato sauce
- 1/2 teaspoon sugar
- 1/2 teaspoon dried basil
- 1/2 teaspoon crushed red pepper flakes
- 1/4 to 1/2 cup chicken stock
- salt and pepper to taste
- freshly grated Parmesan cheese
- Extra Virgin Olive oil

- Wash , core and seed peppers. Cut in julienne pieces, not too thin. Place peppers in saucepan with olive oil, onion, and garlic. Lightly salt and pepper while frying. Add sausage and saute until peppers are tender and sausage is no longer pink.
- Add tomato sauce, sugar, basil, crushed pepper flakes, chicken stock ,and salt and pepper. Simmer sauce on low heat, about 15 minutes.
- Boil spaghetti in an 8-quart pot boiling water with 1 tablespoon salt added. Cook al dente and drain, reserving 1/2 to 1 cup pasta water.
- Place pasta in large deep platter, and pour sausage sauce over pasta, mixing well. If thinner sauce desired, add the reserved pasta water.
- Garnish with grated Parmesan cheese, and additional olive oil at the table, if desired. Serves 4 to 6.
