
NOTE: This meatloaf was one of the favorites at The Old Thresher’s Country Fair, in Elsberry, MO. It was the featured dish on Friday, and no matter how many we made, we always ran out. Just a simple recipe with great results!
Ingredients:
- 2 pounds ground chuck
- 3/4 cup plain dry bread crumbs
- 2 eggs
- 1 envelope Lipton Recipe Secrets Beefy Onion Soup Mix
- 3/4 cup water
- 1/3 cup ketchup
- 1/4 cup green pepper, chopped fine (optional)
- 1/4 cup ketchup for topping

Instructions:
- Preheat oven to 350-degrees. In a large bowl, combine ground chuck, bread crumbs, eggs, soup mix, water, ketchup and green peppers, if using. Use clean hands to mix.
- Place meat in a lightly greased 13 by 9-inch baking pan and shape into a long thick loaf. Spread ketchup over top of loaf and bake uncovered for 60 minutes. Remove from oven and let stand 5 minutes before serving. Serves 6.
