
NOTE: This one-pot country supper is very delicious and filling. The fresh green beans cooked with the sausage and potatoes are tender and full of flavor.
Ingredients:
- 1 pound fresh green beans with snipped ends and halved
- 1 pound baby new potatoes
- 4 quarts water
- 1 teaspoon salt
- 1/4 cup olive oil
- 1 pound smoked beef sausage, cut into 1/2-inch rounds
- salt and pepper

- Place green beans along with potatoes in a 4-quart pot of boiling water with salt added. Boil the beans and potatoes about 15 minutes or until mostly tender. Remove from burner and drain the beans and potatoes in colander. Set aside.
- In a large skillet, pour olive oil to cover the bottom. Place the sausage rounds in skillet, and fry over medium heat about 5 to 6 minutes. Next, place the drained green beans and potatoes to the skillet. Cook the sausage, beans, and potatoes together for about 10 to 12 minutes. Add a little water, if desired. Salt and pepper as desired. Serves 4.
