Spaghetti Aglio e Olio (Spaghetti with Garlic and Oil)

Spaaghetti with Garlic and OIL

NOTE:  I can guarantee every Italian child grew up with this dish.  We had it at least once a week and I can still smell the garlic.  Use fresh curly parsley for best taste.

Ingredients:

  • 1 pound angel hair
  • 1 tablespoon salt
  • 1 cup reserved pasta water
  • 3/4 cup extra virgin or mild olive oil
  • 3 cloves garlic, minced, about 1 heaping tablespoon
  • 4 tablespoons fresh curly parsley, chopped
  • 1/2 teaspoon red pepper flakes
  • salt and freshly ground black pepper
  • Parmesan cheese, freshly grated

Instructions:

  1. Pour olive oil in large pasta bowl or platter.  Add minced garlic, parsley and red pepper flakes.  Stir together and set aside.  Boil pasta in a 8-quart pot boiling water with 1 tablespoon salt.  Angel hair cooks very fast, about 3 to 4 minutes, so turn off heat when pasta is chewy or al dente.  Using a spaghetti spoon, lift the pasta right out of the water and into the pasta platter with the oil mixture.  Add the reserved pasta water and toss together.  Add salt and freshly ground coarse black peper to taste.  Garnish top with freshly grated Parmesan cheese, and keep the cheese at the table using as desired. Serve immediately with hot crusty Italian bread.  Serves 4
