Roasted Salmon with Garlic Butter Sauce

Ingredients:

  • 1/4 cup extra virgin olive oil
  • 1/2 stick butter
  • 2 cloves garlic, chopped fine
  • 1/4 cup fresh Italian flat-leaf parsley, chopped
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 teaspoon coarse sea salt
  • 1/4 teaspoon coarse ground black pepper
  • 1 salmon filet, 2 to 3 pounds
  • 2 tablespoons fresh lemon juice
  • Peppermint sprigs

Instructions:

  1. Preheat oven to 400-degrees.  In a small skillet, place the olive oil and butter, and heat the two together until butter is melted.  Place the garlic in pan and saute on low heat only about 15 seconds, careful not to burn the garlic.  Add the parsley, red pepper flakes, salt and pepper and stir into the butter.
  2. Spray a 13-inch x 9-inch baking pan with cooking spray and lay the salmon in the pan, skin-side down.  Pierce the salmon with a fork in several places, and pour the butter/garlic sauce over the salmon.  Bake for 12 to 15 minutes, or until the salmon turns pink and flaky.
  3. Remove from oven and with a flat spatula, lift salmon off the skin and onto a large platter.  Drizzle the fresh lemon juice over the top and serve.  Garnish with peppermint sprigs.  Serves 6.
