Italian Fried Potatoes & Peppers

NOTE:  These potatoes go well with breakfast, and are a compliment to the Italian sausage and eggs.  If you do like peppers, leave them out.  


  • 2 large russet or Yukon gold potatoes, unpeeled
  • 1/4 cup green bell pepper, chopped small
  • 1/4 cup red bell pepper, chopped small
  • 1/4 cup chopped onion
  • 3 tablespoons olive oil
  • 1 teaspoon course sea salt
  • 1/2 teaspoon coarse black pepper
  • 1/4 teaspoon crushed red pepper flakes

Wash potatoes and pat dry.  Cut potatoes into 1-inch wedges and place in large skillet, along with peppers and onions.  Add the olive oil and over medium heat, stir-fry the potatoes, peppers and onions.  Stir often until potatoes become golden brown, about 10 minutes.   Add the salt, pepper, and crushed red pepper flakes while the potatoes are frying.  When the potatoes are golden crusted, turn down heat and place lid over the potatoes to steam soft, about 5 minutes.  Remove from heat and serve while warm  Serves 6.
