NOTE: These pork chops may be the best you have ever had. They are melt-in-your- mouth delicious! Easy and quick to prepare, they are a dream on a busy night!
Ingredients:
- 4 to 6 (bone-in) pork chops
- Lawry’s coarse garlic salt with parsley added
- 2 eggs, beaten
- 1 cup plain bread crumbs
- 1/3 cup grated Parmesan cheese
- 2 cloves garlic, chopped
- ¼ cup fresh curly parsley, chopped
- 1 teaspoon salt,
- ¼ teaspoon ground black pepper
- Peppermint sprigs
- Olive oil

- Rinse chops under cool water, pat dry. Sprinkle the chops lightly with the garlic salt; set aside. Place the beaten eggs in a shallow pie plate. Make the breading by combining the bread crumbs, cheese, garlic, parsley, and salt and pepper. Place the bread crumb mixture in another shallow pie plate.
- Dip the chops in the egg on both sides, and then into the bread crumb mixture on both sides. Pour olive oil in the bottom of a large skillet, and fry the chops in medium hot oil about 3 to 4 minutes on each side. Lower the heat and put the lid on the pan. Let the chops steam up, about another 8 to 10 minutes. Remove the breaded chops to a large meat platter. Garnish with peppermint sprigs. Makes 4 to 6 servings.
