NOTE: These Garlic Cheese Mashed Potatoes are creamy and rich with just the right amount of garlic. They are a dream and will pair nicely with most any entree.
Ingredients:
- 10 medium red potatoes, about 3 pounds
- 3 quarts water
- 2 teaspoons salt
- ¾ cup half-and-half
- ½ cup butter
- ½ cup sour cream
- ½ teaspoon salt
- 1/8 teaspoon ground black pepper
- 2 gloves garlic, minced
- 1 cup shredded mozzarella cheese
- Fresh chives

- Wash and peel potatoes and cut in quarters. Boil potatoes in a 3-quart heavy pot in salted water for 20 minutes, or until tender. Drain well and keep in strainer.
- In same pot, combine milk and butter and heat until butter is melted. Add the potatoes back into the butter mixture and using a hand held masher, mash potatoes until smooth.
- Add the sour cream, salt, pepper, garlic, and cheese; stir with slotted spoon until potatoes are smooth and flavored. Spoon potatoes into large bowl and garnish top with fresh snipped chives. Serves 8 to 10.
