My neighbor has cows, chickens, dogs, and rhubarb! Actually, she is the wanna-be farm lady, who dabbles in agriculture. She has an early garden, as well as the midsummer garden, and of course the “late” garden. So, being the good neighbor that she is, she occaisonally brings me fresh eggs, and as of last week, rhubarb. I immediately thought of the famous Rhubarb Pie I have in my Rosalie Serving Country Cookbook. Just the thought brought a lucious memory to my tongue. But, since I have lost 12 pounds recently, I dismissed the idea. I just couldn’t make the temptation.
However, one good turns deserves another, right? So, I would make the pie and return it to the good neighbor. After finding the recipe in my cookbook, I changed it up a little, and used lard instead of Crisco for the pie crust. As it was baking, the scent of fresh strawberries and rhubarb filled the kitchen. It then descended to the hallway, bedrooms, and lastly the great room. This was tortue! I so wanted to keep the whole thing and devour every crumb. But, alas, I must’t break the streak of losing pounds, so I carefully got it out of the oven. The smell of the flaky crust and contents were heart-wrenching! I called their daughter, and she pronto showed up at the kitchen door. “Thank you so much,” she said, and carefully carried it over to her mother. That same evening the “family dinner” was held at grandmas, who just lived up the road. I declare, I could still smell that pie, as they all had thier piece. The thank-yous kept coming and coming, and I must say, it was a great feeling to make so many people happy.
