Buttermilk Battered Onion Rings

Buttermilk Battered Onion RingsLately, every time my husband and I would go out to eat, we would order onion rings as one of our sides.   For some reason, we were on a craving for some good old-fashioned crispy onion rings.  It all started when another couple invited us out for lunch after church.  We got our usual steak and baked potato, plus a salad.  But, it was when our friends ordered a special order of onion rings, that our taste buds started popping.  Of course, they offered us a few, but being polite we only took one or two.

That delicious crispy taste of onions took hold and we were determined to find the best onion rings.   Some were soggy, some were mostly coated with breading, and some tasted like they just came out of the microwave.  We just couldn’t seem to find that perfect hot crispy heavenly taste of the onion ring.

So, one day I got out my Rosalie Serving Country Cookbook, and nearly forgetting that I had even included the homemade recipe, there it was starring at me; Buttermilk Battered Onion Rings, on page 83.  I remembered practicing several recipes, and getting the perfect one that I loved.  When the photograver came for the photo shoot , I made them right on the spot!  After the picture was secure, we all delved in and ate the whole batch.

When the next family meal was served around my table, I told the grandkids to just wait a few minutes, that I had a surprise.  I already had the onion rings battered and ready, so popping them in the hot oil had them ready in no time.  When I put the platter on the table, it was like gust of wind blew through the house, and the onion rings were devoured.  They were perfect, hot, crispy, and so delicious!  When all else fails, nothing beats your own “home cooking” especially Rosalie’s Onion Rings!
