NOTE: Spaghetti alla Carbonara is an Italian speciality that has a lasting impression when enjoyed with family or friends. I have in times past added cream, but the original carbonara does not list it. So, this recipe is made with only five ingredients. Please enjoy!
Ingredients:
- 1 pound spaghetti
- 1 tablespoon salt
- 4 to 5 slices pancetta, cut into 1-inch pieces, or regular bacon
- 2 tablespoons olive oil
- 2 cloves garlic, chopped fine
- 3 large eggs, room temperature
- 3/4 cup freshly grated Parmesan cheese
- 1/2 to 1 teaspoonsalt and freshly ground black pepper
- 2 tablespoons fresh curly pasta
- 1/2 cup reserved pasta water

- Preheat oven to 225-degrees. In large skillet, fry the pancetta, or bacon, in olive oil until crisp; about 8 to 10 minutes. Add the garlic and saute in with the pancetta for 30 seconds. Turn to very low, or turn skillet off.
- Boil spaghetti in an 8-quart pot of salted boiling water, and cook according to package directions. While spaghetti is boiling, place a large pasta bowl in the oven to warm (this is important in order to cook the raw eggs).
- When the bowl is warm, remove from oven and beat the eggs into the bowl. Add the cheese, salt, and ground black pepper and continue to beat together until well blended.
- When the spaghetti is cooked al dente, turn off heat and lift the spaghetti right out of the boiling water with a spaghetti spoon and put it into the warm bowl. Add the bacon mixture and drippings . Add the reserved pasta water. With 2 forks, toss the mixture together until well coated.
- Garnish with fresh chopped parsley. Serves 8
