Old-Fashioned Buttermilk Pie

Delicious Old-Fashioned Buttermilk Pie.

NOTE:  This dream comes from Miss Aimee B’s Tea Room located in St. Charles, Missouri, where I would often bring friends for lunch.  Amid the Victorian menu lies this mouth-watering delight.  I love it just a little warm right from the oven.  So delicious!

 

 

Ingredients:

  1. Melt-in-Your Mouth Pie Crust recipe for single pie crust, found in the Rosalie Serving Country cookbook, found on page 162, or use your favourite.
  • 1 1/4 cups sugar
  • 3/4 cup buttermilk
  • 4 tablespoons flour, heaping
  • 3 eggs
  • 1 teaspoon vanilla
  • 1/2 cup butter melted
  • 1 cup coconut

Instructions:

  1. Preheat oven to 350-degrees.  Prepare the pie crust and roll dough to fit a 9-inch pie pan; set aside.
  2. In a medium bowl, place the sugar, buttermilk, and flour.  Mix together well.  Stir in the eggs, vanilla, melted butter, and coconut.  Fill the prepared pie shell and bake for 50 minutes undisturbed.  Remove, and serve warm if desired.  Serves 8.
