Deep Freeze for the Birds


January of 2014 may go down as one of the most wide-spread coldest sprees ever, and there are very few states that have not felt the chill of winter. I think this “ice age” is getting way too common, and we are all looking for the great “Thaw.” There is one thing, however, that I have noticed out my kitchen window….birds. My husband, Bill, faithfully puts out bird seed and even on the coldest of days where degrees are in single digits, or even lower, these little creatures are huddling around their houses. They can’t weigh more than a few ounces, and how in the world are they not frozen in place? I have a hard time walking down to the mail box donned in coat, scarf, gloves and ear muffs. The bird mystery must be one of those God-things that I can’t explain.

 

One thing for sure, this is soup season! I posted a few weeks back that I was starting a Soup Kitchen in Troy, MO., and I am still making the hot stuff, mainly because it is the one thing that warms my bones. Unlike the little feathery creatures that can endure freezing winds and ice caps, this bag of bones gets cold and stays cold. I bring out the hot chocolate, hot coffee, hot tea, and yes, the hot soup.

 

My feature today is the Cabbage Vegetable Lentil Soup. This is a feel-good soup, not only because it is hot and hearty, but it will fit any mood you are in. If you are in your diet plan, then this soup is for you because it works with or without meat. If you are looking for a healthy dish, this again is it. This soup contains lentils, which is one of the top best things you can put in your body. The list of vitamins is way too long to mention, plus it is a good source for protein, iron, phosphorus, and copper. If you are into meat, but want a lean meat, again this soup will meet your need, because you can make it with lean pork or chicken. And we haven’t even mentioned the good cabbage and vegetables, so as you can see, this soup is plain good and healthy. Plus it will warm your bones and you will definitely want to makes this.
