My Easter Frittata


Well, folks, here we are just a few days before Easter Sunday, and everyone is preparing for the big Easter Brunch. Advertisements fill the papers for the best Easter Brunch in town. Many restaurants are believing that hungry folks leaving Easter morning church services will be looking for the best place to go for food. While everyone is dressed up and the kids look like little angels (even dad took his suit out of the moth balls) mom says…”Oh, let’s just go out for dinner, or better yet, brunch!”

Now brunch is the best of breakfast and lunch combined together, hence the word… “Brunch.” This is where the buffet looks like a parade of fresh-cooked dishes costumed among curly kale, parsley and fresh picked flowers. You will find fresh omelets, frittatas, biscuits and gravy, and all sorts of pastries, like giant muffins, scones and cinnamon cakes. These are all arrayed along the side of the best of Easter lunch, like baked ham with pineapples and cherries on top, trays of deviled eggs, homemade potato salad, strawberry pecan salad, and lots of side dishes that would take today and tomorrow to list. Of course being Italian, I just had to put my two cents in and give you all my best ever recipe for Frittata with Spinach and Prosciutto. Besides, after the video, Bill and I…and Cappuccino, would be able to eat breakfast in style. I even went out to my yard and quickly picked jonquils and yellow tulips for the occasion.

I forgot how easy this recipe was, and had it on the table in about 15 minutes. The nice thing about making frittatas is that you can change it up any way you like by substituting homemade Italian sausage for the prosciutto, and/or asparagus, potatoes, sun-dried tomatoes, marinated artichokes or anything else you can imagine for the spinach. So, I say, if you have spent most of your savings on the Easter clothes, and need to save money, just make your own Easter Brunch, and invite the in-laws over for a nice gesture. Everyone needs to find a little humility, after all it is Easter!
